Koldo Royo was born in San Sebastián on the 12th of September of 1958.
His first contact with hospitality took place in the " Bar Antonio " of the capital donostiarra, property of his father.

Koldo began in the kitchen in the restaurant of Juan Mari Arzak, coinciding with the beginning of " nouvelle cuisine ".

Later he worked in other restaurants, like " Casa Nicolasa " and the restaurant    " Angelines " of the Rioja.

Later he decides to travel to Mexico to work in the hotel chain " Zonura ", today called " Camino Real".

On his return to Spain he began to work with Luis Irizar, in his restaurant of Madrid.

In 1985 Koldo arrives at Majorca to take charge of the kitchen of the restaurant " Porto Pi ", of Palm, and the following year he gained a star from the Michelín guide.

In 1988, he wins the first prize of the championship of Spain  kitchen.

In the 89 Koldo participates in the championship of the world, obtaining the 4ªposition, happening to appear in the " Bocusse D´Or ".

In June of that same year Koldo opens the doors of his restaurant in the Marine Stroll of Palma de Mallorca, in which he conserves the star from the Michelín guide.

During all these  years Koldo has participated in several courses and gastronomical days, for example, the Course on the new kitchen distributed in the University Menendez Pelayo of Santander, in September of 1988. Also took part  in the Fair of hostelería " Equip Hotel ", in October of 1991, and the Days on Cheeses of Denomination of Origin in the summer of 1994.

In 1994 he was in addition in the 1st InternationaWeek of the Mediterranea Gastronomy, in Barcelona and more recently in the 96, in the Gastronomical Days of Germany with the Chamber of Commerce.

It is necessary to emphasize in addition, his collaborations in press, radio and television, throughout these years:

In 1994 he made the radio program " Vivir en Mallorca ", dedicated to consultations and prescriptions of kitchen, that emitted all Fridays, during a period of six months, in Majorca Radio of the "Ser Channel".

Throughout year 1995, he wrote several articles on gastronomy, for "Diario 16" of Balearic. That same year collaborated with "Diario 16", in its national editing, publishing a daily recipe.
Also in 1995 he did a program of radio called " A Fuego Lento ", for the transmitter " Ultima Hora Radio ", dedicated to the world of the gastronomy.

To add in addition, the diverse appearances of Koldo in the Television: In the program " La Palmera ", and in " Bona Cuina ", of TV3.
In the summer of 1997, the program " Corazón de Verano".

During the years 1994 and 1995, Koldo made the first series of programs of kitchen for television, that was called " Cocinart con Koldo Royo ", and it was emitted in " Canal 37 " and " Canal 4 ", of the Balearic television. In season 95-96 the second part of " Cocinart con Koldo Royo " was carried out.

In 1997 the series of  television programs called  " A Fuego Lento " was on air in  " Canal 4 " of Balearic.
That same year, Koldo made a program of weekly radio of the same name that his last series of television, for  "Onda CeroMallorca".

In the 98 the fourth series of his programs has been made, call also " A Fuego Lento ", for diverse channels of Digital Via and Telenova of Balearic.
In the 97 he published his own page in Internet, evolving towards a new format of Digital Magazine from September of the 98 (www.afuegolento.com).

Finally, it is possible to indicate the publication of two books of recipes published by Olañeta, and titled " A Fuego Lento " and " La cocina de mi Suegra".
At the moment Koldo is working in a new book of kitchen for children.
